Mee sua dish
Have you heard of Mee Sua? If so, have you tried any Mee Sua dishes before?
Mee Sua (mee is noodle in hokkien and sua is string) is also known as wheat vermicelli, Chinese vermicelli or longevity noodle. It is a thin variety of salted noodle made from wheat flour.
Mee Sua is not as common as the normal rice vermicelli or egg noodle, which are widely consumed in the Asian community. It is a noodle dish commonly prepared for birthdays and special festivities.
Growing up, we sometimes cooked Mee Sua / noodle soup on the weekend, or when someone was unwell and in need of something light and nutritious, or for a birthday breakfast meal.
For birthdays, we will have Mee Sua for breakfast and a proper birthday noodle dish (also known as Nyonya Lam Mee or seh jit mee) at night. When you prepare Mee Sua for birthdays, it is preferred that you do not break the Mee Sua and allow it to be as long as possible (for long life).
Mee Sua Soup
The Mee Sua noodle soup I grew up with is very simple, light but very tasty. It is served with light stock (pork or chicken) and ginger to enhance the flavour, with a little bit of minced pork and egg, and garnished with garlic oil and spring onion.
