Spicy dried shrimp relish
If you love porridge, especially plain rice porridge, this is the dish that I would highly recommend you want to have with your porridge. This dish is so simple, yet so delicious, and will be sure to fire up your appetite.
I did not know about this dish until I was introduced to it by my hubby, who is a teow chew. They love porridge, so this dish is a common side relish that my in-laws have together with plain rice porridge.
There is no fixed recipe for this dish, just adjust according to your taste buds. However, here is a rough guide on what you need.
Ingredients that you need:
20g of good quality dried shrimp
1/2 long chilli – sliced thinly (optional – leave it out if you don’t want it spicy).
2 – 3 Tbsp light soy sauce
2 shallots sliced thin
1 tspn lime juice (adjust accordingly)
- Soak dried shrimp in warm water for 10 minutes or until softened.
- Drain and add in chilli, soy sauce, and shallot, and squeeze the lime juice over the shrimp and toss together.
- Let it sit for a few minutes to allow the flavour to develop further.
- Serve with rice porridge or congee.
