I love leftovers, especially leftover meat dishes.  Not only is the meat well cooked, but the gravy has been infused with flavours.  So we do not need to add lots of sauces or flavours when we recreate other dishes, such as noodles or rice dishes, from the leftovers. I also tend to freeze the leftover meat and use it for Kiam Chye Boay later.

Leftovers are amazingly useful and handy, especially when you want to cook something quick and tasty, such as during the school holidays for those quick and tasty snacks. And it is especially useful during the Covid lockdown time, where you want to limit the visit to the grocery shops to a minimal, thus it is good to be more creative with our meal preparations with what’s in the fridge.

There are so many dishes we can create using leftovers; here are some examples.

Fried Noodles using leftover roast chicken dish

As you can see, we already have a beautiful gravy from the roast chicken, which we can use for the sauce for the noodles.  Just add some fresh vegetables to this noodle dish – mix and stir fry until the noodles are cooked. Serve hot with chilli sauce.

Kaim Chye Boay – a melting pot of delicious leftovers!!!!!

This is an amazing dish to make use of your leftovers! I would freeze most of the leftover meat dishes, such as roast pork, chicken, pork etc.

Once I have enough to make a pot of Kiam Chye Boay, then I add the necessary ingredients and brew this dish for a few hours.

The end result is worth it! And this dish would allow you to enjoy it for a few meals moving from rice to porridge.

Fish Porridge

I would use leftover steamed fish and overnight rice, mix the two leftover ingredients together and simmer on the stove or use a pressure cooker. Porridge is such a wonderful comfort food, especially during the cold winter months.
